CSA veggie boxes = kale smoothies?

We recently started a trial period of a CSA veggie box program through timptations.com. Once a week, a large box of produce is delivered to the lobby of my office building. We've made some new side dishes with the goodies thus far, including steamed purple cauliflower; sautéed rainbow chard with green garlic; and roasted golden carrots (mmmm). With Easter last weekend, we didn't cook at home a couple nights and we had extra produce. I used some of it for my first green smoothie! I used what I had on hand, and enjoyed a berry-banana kale smoothie. I included some Greek yogurt, honey, and fresh squeezed orange juice. The kale and oj were courtesy of our CSA box. I am not on board the "green smoothie every morning" train just yet, but I definitely liked my first concoction. If I add peanut butter next time, I'll likely be sold.

Oatmeal Muffins

Are my newest cooking obsession. I found a recipe on skinnytaste.com to use for Easter, and have been trying adaptations. Adding cinnamon was one change; not processing the oats was another. So was doubling the fruit in the muffins. I made blueberry for Easter, then banana for the week. I want to try strawberry and raspberry as well. I think pumpkin and some with chocolate chips could be yummy, too. The best part is that they're moist and delicious, low cal, and easy to grab for breakfast.
